Brownies are quite popular across the world and are often served with a hot coffee or ice-creams. It quite looks like a cake but where the cakes are soft & spongy, brownies are more chocolaty & fudgy in the texture and taste better when consumed the next day after keeping in the refrigerator.There are a variety of recipes which can be further prepared with brownies like choco brownie ice-cream, choco brownie milkshakes and many more. Usuallly brownies contain eggs but I have made it eggless. Instead, dark chocolate and right amount of butter give a great taste & texture to it. This choco walnut brownie is an eggless & oven-less recipe which is very quick and simple. I am quite a fan of brownies and if the sizzling brownies are combined with vanilla ice-cream then there is nothing more delightful than that.

Ingredients:
- 1 cup flour (maida)
- 1/4 cup cocoa powder
- 1/3 cup butter
- 1 cup dark chocolate
- 1/2 cup powdered sugar
- 1 cup yogurt
- 1/4 tablespoon vanilla essence
- some crushed walnuts
Note:
- In brownies we do not use bakng powder and baking soda because we do not want brownies to rise like a cake. Brownies are chocolaty & fudgy unlike cakes which are soft & spongy.
- I have used 50% dark chocolate for this recipe but any chocolate can work here.
- I have used a little less sugar than the usual taste because I like brownies with an original dark kchocolate taste.
- You can increase or decrease the sugar as per your taste.
- I have used the pure homemade yogurt for this recipe. Yogurt enhances the fudginess of the brownies.
- You can refrigerate and keep these brwonies for upto a week. Whenever you want to enjoy, just take out from the fridge, warm it and enjoy with a cup coffee or with an ice-cream.
- The salt used here to bake the brownies, can used over & over again for baking purpose.
Recipe:
To make the baking setup:
1. Take a broad & big size kadhai and evenly spread some salt (common salt) to cover its base. Put a wired rack or a stand over it and cover the kadhai with a lid. Let it heat for 20 minutes on a low flame.
To Make a brownie batter:
1. Take a double boiler for which, take 1 cup of water in a pan and bring it to boil.
2. Put a glass mixing bowl over the pan in such a way that its bottom should not touch the water and there should be a gap between the glass bowl & water.
3. Add butter and dark chocolate and let them melt.
4. Keep stirring until chocolate & butter melt and combine together.
5. Now, take 1 cup yogurt in a separate bowl and add powdered sugar to it. Whisk well until sugar is dissolved in the yogurt.
6. Now, take 1 cup of flour & 1/2 cup of cocoa powder in a separate mixing bowl. Add 1/4 tablespoon vanilla essence to it.
7. Mix everything well.
8. Once the butter and chocolate mixture cools down, mix it with yogurt & sugar mixture and whisk well.
9. Gradually add the dry ingredients with chocolate mixture and keep whisking really well to avoid lumps. Mix well to get a thick pasty consistency.
To bake the brownies:
1. Take a baking pan, grease the bottom well with butter. Arrange a parchment paper/butter paper at the base. Grease it with butter and dust flour & cocoa powder to coat the base well.
2. Now, transfer the batter in the baking pan.
3. Pat the pan 2-3 times to avoid air bubbles. Garnish with some chopped walnuts.
4. Put the baking pan at the stand in the pre-heated kadhai setup. Cover the lid and let it cook for 30-45 minutes at a low-medium flame. Keep checking in between.
5. Unmould the brownie loaf in a dish cut into square pieces and serve. Enjoy with ice cream or a hot cup of coffee or have it just like that.
