Detailed step wise recipe for Aloo Baingan ki Sabzi – Potato Brinjal – Baingan Aloo Dry – Spicy Baingan Aloo

Aloo baigan is a popular North indian dry recipe served with Roti or parathas. This is a tangy spicy dish which is super easy to cook and tasty at the same time.



This recipe I specifically learnt from my mother-in-law. Here, is the recipe for Aloo Baingan ki Sabzi – Potato Brinjal – Baingan Aloo Dry – Spicy Baingan Aloo.

Ingredients:

Recipe for Spicy Baingan Aloo:

1. Peel the potatoes and wash thoroughly. Cut the potoates in round thin slices.

2. Heat oil in a pan/kadhai and fry the potatoes on a medium flame until turn golden brown.

3. Take out the potatoes on a tissue paper to drain out extra oil and keep aside.

4. Wash the brinjals and make 4 cuts from the bottom to top direction.

5. Take oil in a separate pan/kadhai and add chopped Onions, garlic & green chillies and saute for 5 minutes until raw smell is removed and onions turn golden brown.

6. Add Tomato paste, coriander powder, red chilli powder and salt and cook for a minute.

7. Let the oil ooze out. Add brinjals to it and mix gently. Cover with the lid and cook for 5-7 minutes on a low flame. Add some water if required. Stirr ocassionally until cooked completely.

8. Now, add fried potatoes, garam masala and amchur powder and mix. Cover the lid and further cook for 2 minutes so that the potatoes get covered with the spices. 

9. Switch off the flame and serve hot. Enjoy with Roti or parathas.
