Ingredients:
For cake:
- 1 cup flour (maida)
- 1/4 cup cocoa powder
- 1/2 tablespoon baking powder
- 1/2 tablespoon baking soda
- 1/2 cup oil
- 2-3 tablespoon yogurt
- Sugar to taste
- 1/4 cup water
For icing:
- 2 tablespoons butter
- 50 gms milk chocolate
- 1 tablespoon milk (optional)
Notes:
- Quantity of sugar can be increased or decreased as per the individual’s taste.
- You should check that your microwave is of how many watts according to which the timings are to be set. I baked it for 6 minutes and it turned out really well.
- To check if the cake is baked properly, insert a toothpick or a fork into it. It should come out clean.
- Let the cake cool down completely before demolding and let it cook with its internal heat.
- Oil can be replaced by butter (salted or unsalted)
- If the consistency of the icing is thick, add 1-2 tablespoons of milk to make it easy to spread on the cake.
- While making the batter, slowly add the curd & oil mixture to the dry ingredients and keep whisking continuously to avoid lumps.
Recipe:
1. Take maida in a mixing bowl. Add Cocoa powder to it and mix well. In a separate bowl take curd and add baking powder & baking soda. Mix well and keep aside.
2. Take warm water in a bowl add sugar and oil to it. Stir well until the sugar dissolves.
3. Add curd in the sugar-oil mixture.
4.Whisk the mixture well.
5. Now, slowly add this sugar, oil & curd mixture to the dry ingredients and keep whisking to make a smooth batter.
6. Whisk well so that there are no lumps and transfer the batter to a microwave safe bowl. Grease the baking bowl well with butter or oil at the base & the sides.
7. Tap the bowl 3-4 times gently to remove the air bubbles and put in the microwave oven and bake it for 6 minutes. The baking time varies for every microwave depending on the power. For me, this cake got ready in 6 minutes.
8. Once the cake is ready, insert a toothpick or fork into the cake. It should come out clean which means the cake is baked well. Let it cool completely before applying the icing. Start preparing for the icing for which take 2 tablespoons butter & 15-18 small chocolate cubes in a bowl.
9. Melt it using warm water or microwave it for a minute and mix well to make a smooth consistency. Add milk if required to make it spreadable.
10. Spread this icing evenly on the cake and top it with cherries or any topping of your choice. Moist & yummy chocolate cake is ready.
