Dhokla recipe | Dhokla in Microwave |Instant Microwave Dhokla is a very popular Gujarati recipe. Whenever we think of Gujarati cuisine, dhokla tops the list.This is a very simple & tasty recipe which we can easily prepare at home. It can be eaten as breakfast or an evening snack combined with mint chutney or tamarind chutney or both.Let me share the detailed recipe to make a soft and spongy dhokla at home in the microwave oven instead of steaming it. This also turned out really well.

Ingredients:
For dhokla:
- 2 cups besan (gram flour)
- 1/2 cup sooji (semolina)
- 1/2 tablespoon haldi powder (turmeric)
- 1/2 tablespoon ginger paste
- 1-2 green chillies (finely chopped)
- 1 tablespoon citric acid/baking soda/eno
- Salt to taste
- 1 tablespoon sugar
- 1 tablespoon oil
- 2 tablespoons yogurt
- 2 cups water to make batter
For tempering:
- 2 tablespoon oil
- 3-4 green chillies
- 1 tablespoon mustard seeds
- 1 tablespoon curry leaves
- 1 tablespoon sugar
- a pinch of salt
- 1 tablespoon lemon juice
- 1 cup water
Note/ Tips to follow:
- We usually make dhokla by steaming it but this time I have tried it in the microwave oven for a change and this also turned out really well. I will also share the steamed Dhokla recipe in sometime.
- To make it spongy and we can use any of the three i.e. citric acid, Eno or baking soda.
- Cooking time depends on the power of the microwve. For me, it got ready in 6 minutes.
- We can garnish the dhokla with grated coconut & corainder leaves. I did not have it this time so skipped this. 😞
- You can serve the dhokla cold also with any chutney or sauce of your choice like mint, coriander, tamarind or yogurt-spinach chutney.
Recipe for Instant Microwave Dhokla:
To make the dhokla batter
1. Take gram flour in a mixing bowl. Add semolina, salt, sugar, turmeric, green chillies, yogurt, ginger paste & oil to it. Mix well
2. Start adding water to it slowly and keep whisking to avoid lumps. Make a batter of a little flowy consistency. Keep stirring the batter until becomes lump free. Keep it aside for 20 minutes.
3. After 20 minutes, add a tablespoon of baking soda or eno and mix well. Let it rest for 10 more minutes so that the acid can ferment the batter and make it fluffy. Now, Take a microwae safe wide vessel, grease it well with oil and transfer the batter in it.
4. Now, cook it in the microwave for 5-6 minutes and let it cool completely. Take it out in a dish and cut into square pieces.
To make the tempering
1. Heat 2 tablespoons of oil in a pan/kadhai. Make a slit in the green chillies, add in the oil and fry for a minute and take out. Further add mustard seeds and curry leaves and let them crackle.
2. Add a pinch of salt and 1 tablespoon sugar to it. Further add a cup of water and 1 tablespoon lemon juice and let the sugar dissolve. Turn off the heat. Now, slowly pour the sugar syrup tempering along with the fried green chillies on to the cut dhokla pieces
3. Serve the soft juicy dhokla either hot or cold. Enjoy it with the chutneys of your choice.
