Gond ke laddoo are very healthy and delicious laddoos combined with desi ghee, jaggery & dry fruits which are often given to the new and feeding mothers because they need highly nutritous diet after their delivery.

Ingredients for Gond ke laddoo:
- 3/4 cup whole what flour
- 1/4 gond (edible gum)
- 1/2 cup jaggery powder
- 4 tablespoons dry ginger powder (saunth)
- 3-4 tablespoons whole spices powder (katlu powder)
- 250gms or 1/2 cup desi ghee
- 1/2 cup crushed dry fruits ( almonds, raisins, pistachios, cashews or any nuts of your choice)
Notes/ Tips to follow:
- Gum has to be shallow fried or deep fried at a medium hot oil at a low flame to avoid getting burned.
- Once the mixture is ready, do not cool it down completely before making the laddoos. It should be warm enough to hold and shape into laddoos.
- The quantity of the ingredients should be the same as mentioned above.
- For making the laddoos, the mixture should be warm and convenient to touh and hold. It should not cool down completely otherwise the jaggery will harden and will not hold the round laddoo shape.
- If the mixture becomes dry, add alittle more ghee to retain th moisture.
Recipe:
- Heat 1/4 cup of ghee in a pan and add 3/4 whole wheat flour and roast on a low flame until turns aromatic. Keep stirring occasionally to avoid burning
2. Once the flour changes the color to brown and start leaving the ghee remove it from the flame and keep aside.
3. Now, in the same pan add the rest of the ghee and shallow fry the edible gum pieces or gond on a low flame until they puff up. Keep the flame low and keep stirring.
4. Keep the puffed gum pieces in a dish and crush the puffed gum into a coarse powder using a rolling pin or a belan.
5. In a separate pan, add 1/2 cup of jaggery and cook on a low flame until it melts.
6. Add crushed gum, dry ginger powder (saunth) and whole spices powder (katlu powder) into the jaggery and mixed well.
6. Now, add roasted wheat flour the melted jaggery and mix well.
8. Further add crushed dry fruits and mix really well to make the laddoo mixture.
9. Turn of the flame and let it rest until it becomes warm enough cool enough to touch and hold. We do not need to cool it down completely.
10. Finally, when the mixture is warm take a small portion of it by applying a little ghee on your palms and make a round shape of laddoos. The Healthiest Gond ke laddoos are ready to be served and eat.
