Mutter Pulao is a delicious recipe made out of rice & green peas with aromatic whole spices. It is very easy to make for a quick meal or a comfortable dinner.The piping hot mutter pulao topped with desi ghee or butter tastes really good on a chilly winter night. We can add more seasonal veggies to it other than green peas especially during winters (here in this recipe I have added chopped capsicum but it is completely optional.)We can cook it in in two different ways:
- By pressure cooking it.
- By cooking rice separately and mix with sautéed veggies and spices.
Here, I am sharing the recipe by first way i.e. by pressure cooking.

Ingredients:
- 1 Cup Basmati rice
- 1/2 cup green peas
- 1 medium sized onion (finely chopped)
- 2 green chillies (finely chopped)
- 1 small sized capsicum
- 1 medium sized cinnamon stick
- 1 tablespoon cumin seeds (Jeera)
- 1 black cardamom
- 2-3 green cardamoms
- 3-4 cloves
- Salt to taste
- Red chilli powder (as per taste)
- 1/2 tablespoon garam masala
- 2 tablespoons oil
Recipe:
1. Wash rice thoroughly with running water and soak for 10 minutes.
2. Heat oil in a cooker and add whole spices. Let the cumin seeds crackle and spices turn aromatic.
3. Add chopped onions and green chillies and cook until turn golden brown. Then add green peas and capsicum and cook for 5 minutes on a low/medium flame.
4. Add dry spices (red chilli powder, coriander powder, garam masala & salt) and sauté well till the veggies get coated with the spices and start leaving the aroma.
5. Remove the water from rice and add it with the veggies and mix well.
6. Now, add 2 cups of water to the sautéed vegetables and gently stir. Put on the lid and cook for not more than 3 whistles. Turn off the flame and let the pressure release. Open the lid and mix very gently. Serve Hot!
