Ingredients Roasted Almond Chocolates:
- 1/2 cup cocoa butter
- 1/2 cup cocoa powder (unsweetened)
- 1/4 cup castor sugar or finely powdered sugar
- 1/4 cup milk powder
- 1 tablespoon roasted almonds & raisins
Notes:
- If you want to make a pure dark chocolate, reduce the quantity of sugar.
- If you want to make pure milk chocolate, skip cocoa powder & increase the quantity of milk. powder.
- You can vanilla essence to it to give it an additional flavor, but I have skipped it here to retain the original flavors of cocoa butter & cocoa powder.
- You can use coconut oil instead of cocoa butter to make this recipe.
- I have used less amount of sugar & milk powder to keep it less sweet and more of a dark chocolate. You can vary according to your taste & choice.
- Preferably use unsweetened cocoa powder for this recipe. In case you are uing sweetened cocoa, then reduce the quantity of sugar.
- These chocolates can be stored in the refrigerator for around 3-4 months.
- I have used home roasted almonds and raisins.
How to roast almonds & raisins:
- Take a kadhai and add whole almonds & raisins in it. Keep stirring & sautéing on a low flame to avoid burning for 5-10 minutes
- After 10 minutes, almonds will turn crunchy & aromatic and raisins will become a bit darker in color. Turn off the heat and take out the nuts from the kadhai. Roasted dry fruits are ready.
Recipe:
1. Take a double boiler for which, take 1 cup of water in a pan and bring it to boil.
2. Put a glass mixing bowl over the pan in such a way that its bottom should not touch the water and there should be a gap between the glass bowl & water.
3. Add cocoa butter to the mixing bowl. You can easily get the cocoa butter at any grocery store or you can order online.
4. Let the cocoa butter melt on a low/medium flame. Keep stirring.
5. Once the butter melts completely, add 1/2 cup of cocoa powder & milk powder and keep stirring well so that there are no lumps.
6. Further add 1/4 cup of sugar and mix well to make the batter smooth and lumpfree.
7. Mix everything together to make a fine smooth batter. Add roasted almonds & raisins to the mixture and mix well. Please refer the notes section to know how to roast the almonds.
8. Now, pour the batter into the small silicon moulds using a spoon. You can get these silicone moulds easily at any utensils shop or you can order online.
9. Now, put the moulds in the refrigerator for about 1 hour to set. After an hour, unmould the chocolates by pushing it from the bottom.
10. Enjoy the homemade chocolates. 😊
