Whenever we talk about junk food Pizza tops the list because of the fermented maida and a lot of processed cheese but we can still give a healthy twist to this top most junk food by avoiding maida and yeast.
That is what I have tried to do in this recipe. Also, I have not used oven to bake it neither did I use to ferment the dough.
We cannot resist pizza because we need to take care of our taste buds but we can definitely skip maida and replace it with a healthy whole wheat or multigrain flour and believe me it tastes much better than the maida pizza because the base was not chewy.

Ingredients
For making the pizza dough
- 2 cups whole wheat or multigrain flour
- 1/2 tablespoon baking soda
- 1/2 tablespoon salt
- 2 tablespoons oil
- Italian herbs
- Warm water to knead the dough
For the pizza toppings
- onion cubes
- tomato cubes
- bell peppers
- italian seasoning
- 2-3 tablespoons pizza sauce
- 2 tablespoons tomato ketchup
- 1/2 cup mozzarella cheese
- 1 tablespoon butter
Notes/Tips to follow
- For pizza toppings you can use any vegetables of your choice like mushrooms, sweet corns, paneer, baby corns etc.
- I have used multigrain flour consisting of different grains like wheat, rice, gram flour, millets, maize etc. You can use regular wheat flour also.
- To bake the pizza in a kadhai, you can use a regular steel plate (preferably with a heavy bottom) or a cake baking pan and place it in the kadhai over a wired rack or a stand.
- Apply some oil or butter at the base of the plate/baking pan so that the pizza does not stick to it. You can also use butter paper for the same.
Stepwise recipe r Atta Pizza without oven
- Take 1.5 cups of whole wheat flour / gehun ka aata or multigrain flour in a mixing bowl. Add oil, salt and mixed italian herbs to it.
2. Add 1/4 tablespoon of baking soda, ½ table spoon of baking powder.
3. Mix everything together well so that the flour holds a shape.
4. Gradually add warm water to knead medium soft dough.
5. Apply some oil at the top of the dough , cover with a moist cloth and keep aside to rest for 1-2 hours.
6. After 2 hours, take a baking tray or a steel plate with a heavy bottom and grease it with a little oil.
7. Take a big portion of the dough and place it on the baking tray or the plate and start spreading it using your fingers or palms.
8. Seal the edges by pressing with fingers.
9. Now, prick the flattened dough using a fork so that the dough does not puff up while baking.
10. Apply butter at the dough and evenly spread.
11. Further add 2 tablespoons of pizza sauce and spread generously and evenly.
12. Add shredded mozzarella cheese.
13. Now, add the toppings of your choice like capsicum, onions, bell peppers, tomatoes, mushrooms, corns etc.
14. Sprinkle some butter, chilli flakes and Italian seasoning at the top.
15. Place the baking tray in the pre heated kadhai and cover with a lid.
16. Bake it for 15-20 minutes at a low flame. After 20 minutes take it out of the kadhai and Atta pizza is ready to be served.
