India is full of various of traditions, cultures, languages and the most important is food. Every state or region has their own specific food cuisines which are famous round the world be in Punjabi, Gujarati, Rajasthani or South Indian.
I am personally a biggest fan of South Indian cuisine and Dosa is my all time favourite and Masala Dosa is above all. If I have to choose between North Indian food or South India food (Dosa to be precise) then I always opt for Masala Dosa. 😉
South Indian food is very healthy, tasty and light on stomach. I often cook Idli, Sambhar, Dosa and chutney at home and we all love it. But this post of mine is not about any of these dishes but specifically about how to make Masala or potato filling for Masala Dosa.
This is a very simple yet very delicious recipe and enhances the taste of Dosa multiple times :). It is made with well boiled potatoes, curry leaves, onions and mustard seeds.
This potato filling can be used in several other ways like to make sandwich filling, samosa filling, cutlets and tikkis, to make aloo paratha or to combine with pooris for breakfast or lunch. Also, please check the recipe for making Masala Dosa batter from scratch.
So, here is my recipe for very delicious and easy Aloo Masala for Dosa – Dosa wale Aloo recipe – Potato Bhaji for Dosa – Aloo Bhaji for Dosa – Potato curry for Masala Dosa – Potato filling for Dosa
Ingredients
- 3-4 medium sized boiled potatoes
- 1 sliced onion
- 1/2 tablespoon mustard seed
- 7-8 curry leaves
- 1 tablespoon chana dal (Gram lentils)
- 1 tablespoon green chillies
- 1/2 tablespoon ginger
- 1 tablespoon lemon juice
- Salt to taste
- 1 tablespoon turmeric powder
- 1 tablespoon oil
Notes/Tips to follow
- This filling tastes nice if the potatoes are boiled and mashed well.
- Curry leaves and Gram lentils (Chana dal) are two key ingredients of this recipe.
- You can also add dried red chillies and cumin seeds (jeera) for tempering.
- Amchur or dry mango powder can also be added instead of lemon juice.
Recipe for Aloo masala for Dosa
- Firstly, heat 2 tablespoons of oil in a pan.
2. Add 1 tablespoon mustard seeds and 7-8 curry leaves let them crackle.
3. Add 1 tablespoon ginger and green chillies and stir.
4. Now, Add 1/2 tablespoon of chana dal and sauté.
5. Further add sliced onions and cook until turn translucent.
6. Add salt, turmeric powder and mix well.
7. Then add boiled mashed potatoes and mix well with the spices.
8. Once the potatoes are mixed well, add fresh coriander leaves.
9. Finally add 1 tablespoon of lemon juice and mix.
10. The potato filling is ready to be filled in your favourite dosa. Enjoy with fresh coconut chutney & Sambhar.
