What are Potato wedges?
Potato wedges are crunchy and delicious snacks made with potato without removing the peel with a crispy crust outside and soft and juicy inside. They are usually made by blanching the potatoes in salt water, coat with maida or corn flour and seasoning and deep frying.
I have not used maida in this recipe neither did i deep fried it. I have used rice flour instead of maida and have baked it instead of deep frying to keep it a little healthy.
These potato wedges are so loved by kids and I often make this at home for my family especially during monsoon or rainy season. They go really well with any kind of cheesy dip or ketchup along with tea or coffee.
Different from French fries?
It is a very quick and easy recipe to make at home either by frying or baking. They are different from French Fries as they are a little thick and a semi-circular shape with a lot of seasonings and chilli flakes flavour in it whereas the French fries are thinner and usually have salt sprinkled over them.
I personally prefer these wedges over the French fries because of the variety of flavours in them as I am a big fan of Oregano & Italian mixed herbs seasonings. I find French fries a bit bland but that is my son’s favourite snack. Whenever we go out to eat and cannot find anything for him to order (as like other kids he is very finicky about eating green veggies) ordering French fries is the best and the safest option. And he is happy because he does not have to share with anyone. 🙂
These wedges can be a good option as a starter or an appetizer if there is a friends’ get-together at home.

Ingredients
- 3 Medium sized potatoes
- 1 tablespoon corn flour
- 1 tablespoon rice flour
- Salt to taste
- 1 tablespoon olive oil
- 1 tablespoon italian mixed herbs
- Chilli flakes to taste
- 1/2 tablespoon black pepper powder
- 2 cups water for blanching
- 1 tablespoon salt for blanching.
Notes/Tips to follow
- We do not have to boil the potatoes, we only have to blanch a little because we need to keep them a little raw. They will be fully cooked while baking or frying.
- You can bake or deep fry the wedges as per your choice. Deep fried wedges are tastier than the baked ones for obvious reasons but baked are more healthier and guilt free.
- You can also use maida instead of rice flour to make the coating.
- If you want you can sprinkle a little olive oil while baking to make them more crunchy.
Recipe for Crispy Baked Potato Wedges
- Firstly take 3 medium sized potatoes.
2. Wash them thoroughly and nicely.
3. Cut into medium thick slices or wedges.
3. Heat 2 cups of water in a pan.
5. Add 1 tablespoon salt.
6. Bring it to boil and add the cut wedges. Blanch for 5 minutes.
7. Drain the excess water and let the wedges cool.
8. Transfer the potatoes to an a mixing bowl and add 1 tablespoon corn flour.
9. Add 1 tablespoon rice flour.
9. 1/2 tablespoon garlic powder.
10. 1/2 tablespoon black pepper powder.
11. Add 1 tablespoon Italian mixed herbs seasonings.
12. Add chilli flakes to taste.
13. 1 tablespoon olive oil and salt to taste.
14. Mix everything together do that the potatoes are coated well with the spices.
15. Add water as required and mix well.
16. Now, place the potatoes in air fryer and bake at 180 degrees for 15 minutes. Keep a check.
17. After 15 minutes, potato wedges are ready to be served. Enjoy with your favourite dips or sauces.
