Eggless Vanilla Sponge Cake - NoOven NoEgg Vanilla Cake - Eggless Vanilla Cake without Oven - Eggless Vanilla cake in Kadhai

Vanilla sponge cake is the most basic and easy cake which we can make at home without eggs and oven. Since my childhood I had been seeing my mother baking this for us in an electric oven quite often and we used to enjoy the baking aroma.

Now, also bake this every now and then with a basic kadhai and salt setup and every time it comes out really soft and spongy.

The upper crust gets a nice golden brownish colour and inner bread is very soft and spongy that too without egg. I am a kind of obsessed with Kadhai and eggless baking 🙂

Ingredients:

  • 1 Cup multi-purpose flour (maida)
  • 1/2 tablespoon baking soda
  • 1 tablespoon baking powder
  • 1/2 cup yogurt
  • 1/2 cup oil
  • 1 tablespoon vanilla essence
  • Milk as required
  • 1/2 cup powdered sugar

Notes/Tips to follow

  • To bake the cake in kadhai, pre-heat the kadhai with salt for 20 minutes at a medium flame.
  • Once the cake is baked, let it cool down completely. The inner crust will bake with its internal heat.
  • Quantity of sugar can be increased or decreased as per taste.

Step wise recipe for Eggless Vanilla Sponge Cake

1.Firstly spread some salt in a heavy bottom kadhai and place a wired rack or a stand. Pre-heat the kadhai for 20 minutes at a medium flame.

2. Take 1/2 cup of curd in a bowl.

3. Add 1/3 cup of oil to it.

4. Whisk well.

5. Take 1 cup of multipurpose flour or maida in another mixing bowl.

6. Add powdered sugar.

7. Add vanilla essence.

8. Add 1/2 tablespoon baking soda and 1 tablespoon baking powder and mix everything together.

9. Now gradually start adding the dry ingredients to all the wet mixture and keep whisking.

10. Gradually add milk and whisk well to avoid any lumps.

11. Whisk well to make a lump free batter.

12. Grease the baking tray with oil and transfer the batter in the baking tray.

13. Tap to remove air bubbles.

14. Place the baking tray in the pre-heated kadhai setup and cover. Bake for for45-50 minutes at a low-medium flame.

15. After 50 minutes turn off the flame and let the cake cool down completely. Unmould the cake and serve. Enjoy with a hot cup of coffee.
