Detailed recipe for Crispy Veggie Fingers – Crunchy Vegetable Strips -Veg Sticks – Vegetable Fingers 2 ways – Veggie Nuggets (Baked & shallow fried)

This reipe is actually a combination of vegetable cutlets and veggie fingers. I have mad it in twoways :
1. Shallow Frying
2. Air frying (Baking)
In the Air frying method I have not used any oil which has made it super healthy yet crispy and tasty. The shallow frying also did not use a very little amount of oil.

This recipe consists of several vegetables which makes is extremely healthy and it is great way to feed the kids with vegetables which is a very tiring and a challenging task :).
Kids are usuallyquite finicky about eating vegetables and I try this alternative for my son and he happily eats it.
These Crispy Veg Strips Recipe – Crispy Veggie Fingers – Crunchy Vegetable Strips -Veg Sticks – Vegetable Fingers 2 ways – Veggie Nuggets (Baked & shallow fried) are also a very good option for tea time snacks, or a friends get together or even for the Diwali party.
These can be combined with tomato ketchup, mint chutney, cheesy mayonaisse dip or any sauce of your choice.
I also make sandwiches out of these by placing the cruncy veggie fingers between twobread slices and applying butter and spreads and top it with some sliced onions, tomatoes, cucumbers & capsicums and they taste super yummy.:P
So, here is my recipe for Crispy Veggie fingers.

Ingredients
- 2 boiled mashed potatoes
- 1 cup finely chopped carrots
- 1 cup bread crumbs
- 1/2 cup finely chopped capsicum
- 1/2 cup boiled green peas
- salt to taste
- 1/2 cup boiled sweet corns
- 1/4 tablespoon black pepper powder
- chilli flakes to taste
- 1/2 tablespoon italian mixed herbs
- 1/2 tablespoon paprika
For Corn flour slurry
- 1 tablespoon corn flour
- 1 tablespoon rice flour
- 1/2 tablespoon salt
- 1/2 tablespoon italian mixed herbs
- Water to make slurry
Notes/Tips to follow
- To make thee fingers you can use more vegetables of your choice like french beans, onions etc.
- If you feel that the mxture is wet or difficult to bind, you can add 1-2 tablespoons of gram flour (Besan) or increase the quantity of bread crumbs.
- You can use maida instead of corn flour orrice flour to make the slurry.
- These fingers can also be deep fried in order to make it crispier and tastier.
- You can also fry the mixture with 1 tablespoon of oil and and then sauteingall the vegetable together.
How to make Crispy Veg Strips Recipe
- Firstly Take 2 boiled mashed potatoes in a mixing bowl.

- Add 1 cup of finely chopped carrots,.

- Add 1/2 cup chopped capsicum.

- Then add 1/2 cup boiled green peas and 1/2 cup of boiled sweet corns.

- Add breadcrumbs.

- Further add salt to taste, chili flakes, paprika, mixed herbs, black pepper powder.

- Mix everything well and keep the mixture aside torest for 15-20 minutes.

- Now, in a separate bow, add 1 tablespoon rice flour, 1 tablespoon, 1/2 tablespoon salt and mixed herbs.



- Gradually add water and whisk well to make a smooth lump-free slurry.

- Now, grease the palms with some oil and take a small portion of the mixture. Gently make shape.

- Dip the fingers in the corn flour slurry.

- Coat well with bread crumbs.

- Refrigerate the fingers for 2-3 hours.

Method 1
- Shallow fry the fingers in 2 tablespoons of oil and serve hot with tomato ketchup or any dip.


Method 2
- Place in fingers in an air-fryer and bake for 15 minutes at 180 degrees.
