Winter is the season when we get unlimited variety of exotic vegetables in the market and it realy makes me happy to buy all these variety of colorful veggies like carrots, broccoli, bell peppers, cabbage, zucchini, green peas and mushrooms.

This recipe is so good in taste and super quick and easy at the same time. It is combined well with Fried Rice or Noodles or can be eaten alone as a salad recipe.
This is a super healthy recipe which contains very less oil with the goodness of veggies and the flavours of sauces.
What is Vegetable Stir Fry?
This recipe is made with different variety of veggies sautéed in a Wok or a pan at a high flame to retain the crunchiness of the veggies. It consists of the flavors of ginger , garlic pepper and sauces like soy sauce & chili sauce. It can be made with a little gravy or in dry form. The veggies are cooked for 6-8 minutes at a high flame and should not be overcooked. It can be made in Indo-Chinese or Indo-Italian style.
Which veggies are required to make Vegetable Stir Fry Recipe?
Any seasonal or available veggies like green peas, mushrooms, broccoli, baby corn, bell pepper, cabbage, carrots , zucchini etc. can be used to make this recipe.

Ingredients
- 200 gms Mushrooms sliced
- 1 medium sized zucchini (sliced)
- 1 cup (100 gms) broccoli
- 3/4 cup bell peppers (red & yellow)
- 1/2 cup green capsicum
- 1 small chopped onions or spring onions
- Some green onion leaves for garnishing
- 1 table spoon finely chopped ginger
- 1 tablespoon finely chopped garlic
- 1/2 tablespoon chili sauce
- 1 tablespoon soy sauce
- Water as needed
- Salt to taste
- 1 tablespoon vinegar
Notes/Tips to follow
- You can use any veggies of your choice to make this recipe like baby corns, sweet corns, cabbage, lettuce etc.
- Try to sauté the vegetables at a high flame to retain the color and crunchiness of the veggies.
- Do not overcook the veggies.
- You can skip adding the water if you want to make Dry Stir fry Veg.
How to make Vegetable Stir Fry Recipe
- Heat 1 tablespoon oil in a pan. Add ginger, garlic & chopped spring onions.
2. Sauté for 2 minutes at a high flame until raw smells goes away.
- Add all the vegetables except broccoli and cook for 2-3 minutes at a high flame.
3. Add salt, soy sauce and chili sauce and mix well.
4. Now add salt to taste and mix well.
5. Add blanched broccoli.
6. Now, add a little water and mix. Cover and cook for a minute.
7. Add vinegar and cook for 1 minute.
8. Garnish with spring onion leaves and enjoy with Noodles or Fried Rice. 🙂
