As we are already in the middle of cold and chilling winters, all we need is a hot cup of tea or coffee or a bowl of hot comforting soup.


There is an unlimited variety of soups which we can easily prepare at home and enjoy during winters while watching our favorite shows on the television. 😉
Soups are healthy, delicious and filling yet light at stomach. In this post I am sharing a supper healthy and easy recipe of Veg Clear or Vegetable soup which is gluten free, Vegan and loaded with vegetables. This soup is also very very healthy for someone who is diabetic or suffering from heart diseases and extremely easy to make.

We can add any vegetables of our choice from carrots to capsicum and from broccoli to mushrooms. I have not added any spices in this recipe just pure nutrients to veggies. This soup also gives warmth and comfort during the chilly winter night and wholesome nutrition at the same time.

It can also be a great option for those who follow a Vegan diet or those who are allergic to gluten.

Ingredients

Recipe for Gluten Free Vegetable Soup

  1. Heat 1 tablespoon olive oil in a pan.
  2. Add chopped ginger, garlic and green chillies. Cook for 30 seconds.
  3. Add chopped spring onions until the raw smell goes away.
  4. Now add finely chopped cabbage, finely chopped french beans, capsicum and carrots.
  5. Cook for a minute at high flame.
  6. Add mushrooms and boiled sweet corns and cook for another minute.
  7. Now add 1/2 tablespoon black pepper powder and salt to taste. Mix well.
  8. Add 1.5 glasses of water or vegetable stock.
  9. Cover and cook for a minute until desired consistency.
  10. Garnish with spring onion leaves. Serve hot and enjoy the goodness of pure veggies 🙂
