Ingredients:

  • 100 gms Cauliflower/Gobhi
  • 1/2 litre milk
  • 1 tablespoon ghee
  • Sugar to taste or 1/4 cup
  • 1/2 tablespoon cardamom powder
  • chopped nuts ( as per choice)
  • 1/4 cup milk powder

Notes/Tips to follow

  1. To make this recipe, preferably use full fat milk to bring out the extraordinary flavour & taste.
  2. Sauté gobhi really well in ghee until its raw flavour gets removed and it becomes soft otherwise it will spoil the taste.
  3. After shallow frying the Cauliflower, cook it in milk well so that all the flavours of milk, saffron, cardamoms get mixed with it.
  4. This dessert tastes really good the next day because it gets thickens and all the flavors get mingled together.
  5. We only need the upper portion (flower portion) of the cauliflower. Do not use the step part.
  6. We need to grate the cauliflower very finely so that it gets mixed with milk nicely.

Recipe for Gobhi Ki Kheer

  1. Grate the cauliflower and discard its stem.

2. Heat 1 tablespoon ghee in a pan.

3. Add grated cauliflower.

4. Sauté the grated gobhi until its raw smell gets removed.

5. Heat 1/2 litre milk in a kadhai at a low flame.

6. Stir continuously and bring it to boil. Add sugar to taste and cook.

7. Add 1/4 cup milk powder and whisk well so that there are no lumps.

8. Now add chopped nuts/dry fruits of your choice and mix.

9. Further add cooked gobhi and cook until it thickens.

10. Delicious Gobhi ki Kheer is ready to be served.
