Gobhi or Cauliflower is one of the signature vegetables of winter and I believe there could be hardly anyone who does not like Aloo Gobhi ki Sabzi! Even while writing the post I am craving for aloo gobhi with piping hot rotis topped with Ghee..LOL. 😀
The combination is super yum and comforting. This recipe is very quick and easy to make and delicious at the same time. This is a dry Gobhi Aloo ki sabzi which can be combined well with rotis or parathas.
Usually, I cook it for a lazy brunch and combine with Parathas and curd and it is liked by everyone in my family. My way of eating is to put the sabzi on top of the roti or paratha and roll it. I also make aloo gobhi sandwiches with the left over vegetable which is one of my favorite versions of eating any dry veggie.
In this post I am sharing the recipe for No Onion No Garlic Aloo gobhi which is completely vegan and gluten free. I have cooked it with ginger, green chillies and whole spices and trust me me it tastes way better than the one cooked with onions.
I had learnt this recipe from my mother in law who uses a lot of whole spices and gingers in her cooking and I really got fascinated by this way of cooking. Before that I never imagined to cook any vegetable or gravy without onion or garlic. I did not know that that ginger and whole spices can be so flavorful and can do wonders in our cooking. 🙂

Ingredients
- 400 gms cauliflower/ gobhi
- 1 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon mustard seeds
- 1 teaspoon chopped green shillies
- 1 teaspoon chopped ginger
- Salt to taste
- some fresh coriander leaves
- 1 teaspoon red chilli powde
- 1 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 tablespoon oil
Notes/Tips to follow
- Blanching the cauliflower before cooking is very important as it tends to contain a lot of germs and impurities which does not get cleaned just by washing.
- After adding gobhi in the kadhai, do no over cook as we have already blanched it. It will turn the cauliflower soggy and crumbly.
- Let the potatoes cook well before adding the cauliflower and later on just cook for 5 minutes to avoid overcooking.
Recipe for Aloo Gobi without Onion Garlic
- Firstly cut cauliflower into medium florets and blanch with 2 cups boiling water and 1 teaspoon salt for 5 minutes.
2. Turn off the heat and strain water.
3. Heat 1 tablespoon oil in a kadhai. Add cumin seeds, coriander seeds, mustard seeds and let them crackle. Further add chopped ginger and green chillies and sauté until the raw smell goes away.
4. Now, add potato cubes and cook for 3-4 minutes until turn a little soft.
5. Add coriander powder, haldi, red chilli powder and salt and mix well.
6. Further add blancher cauliflower/gobhi and mix well.
7. Now add fresh coriander leaves.
8. Cook for 10 minutes at a low flame. Keep checking in between. Delcious No Onion No Garlic Aloo Gobhi is ready to be served. Enjoy with Roti or Paratha. 🙂
