Ingredients Mutter Paneer:
- 500 gms cottage cheese (paneer)
- 1 big onion (finely chopped)
- 1/2 cup green peas (mutter)
- 2 green chillies ( can be increased or decreased asper taste)
- 3-4 garlic cloves
- 1/2 tablespoon ginger (chopped)
- 1 tablespoon kashmiri red chilli powder
- 1 tablespoon coriander powder
- 1/2 tablespoon dry fenugreek leaves (kasoori methi)
- 2-2 cloves
- 1 black cardamom ( badi elaichi)
- 2 small cinammon sticks Dalchini)
- 1/2 tablespoon cumin seeds (jeera)
- 1 tablespoon garam masala powder
- 1/2 tablespoon honey
- 1/4 table spoon tomato ketchup
- 1 tablespoon milk powder
- 1/4 cup milk
- 1/2 cup water
- Salt to taste
- 2 Tomato (chopped)
- Oil for shallow frying the cottage cheese cubes
- 3 tablespoons oil for gravy
Note:
- Refrigerate the paneer for half an hour before frying. It will avoid the paneer cubes to break while frying.
- Add fresh cream to get more creamier & thicker gravy
- Quantity of red chilli powder can vary as per taste.
Step wise recipe for Mutter Paneer
1. Cut the cottage cheese in medium sized cubes.
2. Heat oil in a pan/kadhai ans shallow fry the cubes on a low flame until golden brown. (This is an optional step, you can use the raw paneer cubes as well.)
3. Keep flipping the paneer cubes to avoid getting burned.
4. Take the paneer cubes out of the kadhai on tissue paper to drain out excess oil.
5. Now, heat 1 tablespoon of oil in another kadhai and add onions, garlic, ginger & green chillies to it. Cook for until the raw smell is removed.
6. Add chopped tomatoes and cook for 2 minutes.
7. Let the mixture cool and transfer in a mixer jar and make a fine paste.
8. In the same kadhai, take 2 tablespoons of oil and add the whole spices like black cardamom, cumin seeds, cloves, cinnamon sticks and black pepper corns. Now, add the onion tomato paste to it and saute for 2 minutes.
9. Add dry spices like turmeric powder, red chilli powder, salt and coriander powder and cook until all spices get mixed and ooze out the oil.
10. At this stage, add green peas, milk powder, honey and tomato ketchup and mix well until peas get coated with the spices.
11. Add 1/2 cup of water and stirr well. Cover the lid and cook for 2-3 minutes.
12. Add crushed kasoori methi and mix well.
13. Add 3 tablespoons of milk and let the gravy come to a boil.
14. At this point add the paneer cubes and mix gently. Mutter paneer is ready.
15. Serve hot and enjoy with Roti, naan, paratha or rice.
