Croissant is a pastry which we often find in the bakeries shops and the bakery section of various luxury hotels was originated in Austria but is quite popular in France. It has different pronunciations according to different regions & countries. In French it is pronounced as “Kwa-sawng” whereas in British english it is pronounced as “Kwas-on” and in American english it is pronounced as “Kr-saant“..Pheww… So confusing..isn’t it!
But whatever & however it is pronounced we have to do nothing but to enjoy this wonderful dessert/pastry. I am ofcourse not here to give any kind of English lessons to anyone but as most of us (I also did a quite a research on it.😋) were quite unsure about how to pronounce it. Ingredients NoOven Eggless Chocolate Croissants:
For the dough:
- 1 cup flour (maida)
- 1/2 cup butter
- 1 tablespoon sugar
- 1.5 tablespoon active dry yeast
- 1/2 table spoon salt
- 1/4 lukewarm water
- lukewarm milk (to knead the dough)
For filling & garnishing
- chocolate cubes (at room temperature)
- chocolate sauce (as per choice)
Note:
- I have tried to make this recipe quite simple & easy so that we can easily make this at home. Hence, I have baked it on the gas stove with a very simple baking setup.
- I have used a kadhai and some salt to bake it. We need to pre-heat the kadhai & salt at a low flame by covering it with a lid for 20 minutes to maintain the temperature.
- Need to spread the salt at the base of the kadhai in order to avoid it burning from the bottom.
Recipe:
To make the baking setup:
1. Take a broad & big size kadhai and evenly spread some salt (common salt) to cover its base. Put a wired rack or a stand over it and cover the kadhai with a lid. Let it heat for 20 minutes on a low flame.
To make the dough:
1. Take 1/4 cup of lukewakrm water or milk. Add 1 tablespoon sugar and mix well until sugar dissolves.
2. Add 1.5 tablespoons of active dry yeast and mix everything well. Keep aside for 10-15 minutes.
3. After 15 minutes, the yeast should turn frothy & rise well.
4. Now, take 1 cup of flour in a mixing bowl. Add a pinch of salt & 3 tablespoons of butter in it. Add the yeast & sugar mixutre and mix well. Now, slowly add warm milk and start kneading the dough. Do not worry if the dough turns sticky. It should come together and become smooth as we continue kneading. Keep it aside for 20 minutes.
To make the croissant:
1. After 20 minutes, knead the dough again. Now, take the whole dough, dust it with some flour and start rolling thin to make a large sized base.
2. Apply butter on the flattened base and spread evenly throughout.
3. Now start folding the base from the edges to make a square shape. as shown in the picture.
4. Keep this folded dough in the refrigerator for 30 mins. Repeat this complete process (of rolling, applying butter, folding & freezing for 30-45 minutes) 3-4 times. Finally, after around 3 hours remove the dough and take 5-6 small ball sized portions.
5. Now, roll all the balls thin to make the flat bases and put aside.
6. Further, take one flattened base and apply butter on it. Put another base over it. Similarly, do it for other bases and put the last base at the top making a stack of it as shown in the picture.
7. After this, again roll this stack in a large flattened base.
8. After rolling the base, cut it into four portions.
9. Further cut every quarter portion into 2 portions.
10. Now, make a small slit at the broader side of the portion and keep a small peice of chocolate cube. We can also chop the chocolate and spread at the base.
11. Start rolling dough from the broader side towards the narrow one as shown in the picture.
12. Similarly do this process for the remaining portions and place on a butter paper. Grease them with some butter.
To bake the croissant:
1. When the kadhai is pre-heated for 20 minutes, keep a steel or aluminium plate over the stand and arranged the croissant at the plate.
2. Cover the lid and let the croissants bake for around 20-30 minutes at a low /medium flame. Keep flipping them using to avoid burning and bake evenly from all the sides.
3. The yummy choco filled croissants are ready. Garnish with chocolate syrup or sauce. Enjoy!
