Detailed step wise Milk Cake Recipe along with photos
Milkcake as the name says is a cake made with milk. This is a rich and soft dessert made completely with milk and sugar. It can be prepared with a very limited & easily available ingredients at home. We don’t need to any additional flavor to it.
It is a very simple but a little time consuming as we have to continuously cooking and stirring the milk but the end result is just amazing.
This is one of my Rakshabandhan special recipes.
I don’t like the very brownish color of Milk cake but a little white, so kept it that way.
I usually don’t like desserts but this one tasted so good that I could not resist. Also, this can also be consumed during janmashtmi fast as it doesn’t contain any grains or anaaj.

Ingredients:
- 1 Litre milk (Full cream)
- 1/2 cup sugar
- 1 tablespoon ghee
- 1/2 tablespoon lemon juice
Notes & tips to follow:
- To make a milk cake, preferably use full cream milk to get a nice rich & soft texture.
- Use a heavy bottomed kadhai ir a pan as we need to cook the boil for long and if the bottom will be light, either the milk will burn or it the pan will burn.
- Try to use an iron or steel utensil/kadhai to make this recipe.
- Usually in the sweet shops, they use alum to granulate the milk but we can use a little lemon juie or citric acid for the same.
- We do not want to curdle the milk like a paneer, we just need to make granules out of it. Hence, a very little quantity of alum or lemon juice is required like a pinch of alum or 1/2 a tablespoon of lemon juice.
- I usually like the milk cake a little lighter in color. If you want to make it brownish, cook a little more once the sugar is caramalized but make sure that it does not burn or stick at the bottom of the pan.
- You can add cardamom powder to it to give additional flavor.
- To set the milk cake well, wrap the tray in a thick towel and let it rest for 2-3 hours. Wrapping in thick towel helps retain the heat and let it set well.
- Try to use an aluminium tray to keep the milk cake.
- Keep in the refrigerator or consume it soon to avoid getting spoilt.
Stepwise Milk Cake Recipe
1. Heat 1 litre full fat milk in a heavy bottomed kadhai at a medium flame.
2. Keep stirring until it comes to a boil.
3. Lower down the heat and keep stirring. Cook until the milk reduces to half of its original quantity.
4. Once the milk reduces to half, gradually start adding lemon juice and stir.
5. Milk will start to granulate (granules will start forming). Keep stirring.
6. Scrape the dried milk from the sides.
7. Once the milk thickens, start adding sugar and keep stirring.
8. Stir well until the milk starts to caramalize and milk starts leaving the sides of the pan.
9. Add 1 tablespoon of ghee and mix well.
10. Now, take a flat bottomed tray (any cake tin or a flat bowl). Grease it well with ghee.
11. Turn off the heat and transfer the condensed milk to the greased tray.
12. Press it gently with a spoon to set and make it even
13. Now, cover the tray using a plate and wrap it in a towel. Keep aside to set for 2-3 hours.
14. After 3 hours, cut the cake into any shape of your choice and serve. Enjoy and Happy Rakshabandhan to all!!
